Moringa leprechaun bars

Moringa leprechaun bars are vibrant, nutrient-packed St. Patrick’s Day (or Christmas) treats. They're decadent, and you might be surprised to find that they're made with filling and nutritious sweet potatoes. This recipe makes 12 bars. Ingredients: Crust:
  • 1 cup cassava flour
  • 1/2 cup arrowroot starch
  • 3/4 cup coconut oil
  • 1/4 cup maple syrup
  • 1/4 teaspoon salt 1 teaspoon vanilla extract
Filling:
  • 1 large white sweet potato (about four cups cooked and diced)
  • 1/4 cup maple syrup
  • 1/2 cup coconut oil
  • 1/2 lemon, juiced
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/4 teaspoon moringa powder
  • 1/4 teaspoon spirulina powder (for extra green color)
Topping:
  • Shredded coconut and ground turmeric (for "golden" sprinkles)
Instructions:
  1. Peel, dice and boil the sweet potatoes until soft. Strain the boiled sweet potatoes and let them cool.
  2. Get your food processor or a mixing bowl and add the dry crust ingredients (cassava flour, arrowroot starch and salt).
  3. Get a small saucepan and melt 3/4 cup coconut oil until there are no solid chunks left.
  4. Add the melted coconut oil, vanilla and maple syrup to the food processor or mixing bowl and combine with the dry ingredients. The shortbread dough needs to be malleable and soft.
  5. Line an 8x8 sheet tray or pan with parchment paper so the brownies are easy to lift when done. Use a spatula to spread the shortbread mixture evenly on the pan.
  6. Bake the cassava shortbread at 325 F for 14 minutes, until slightly golden brown. Once baked, set the pan aside and let the bars cool completely.
  7. While waiting for the shortbread to cool, combine all the filling ingredients in a food processor. Process until you get a smooth paste.
  8. Place the filling on top of the cooled shortbread. Use a rubber spatula to spread the filling evenly.
  9. Combine the shredded coconut with a pinch of ground turmeric in a bowl and stir. Sprinkle the golden shredded coconut on the shortbread. Refrigerate it for at least two hours or until the golden sprinkle sets.
  10. Once the filling and golden sprinkle have set, cut the shortbread into 12 pieces. Freeze any leftovers.

Moringa white hot chocolate

A cozy, antioxidant-rich winter drink that is made with peppermint, white chocolate, moringa and creamy coconut milk. Makes two servings. Ingredients:
  • 1 (14 oz) can coconut milk
  • 1/2 cup water
  • 1 teaspoon moringa powder
  • 1 cup white chocolate chips
  • 1/2 teaspoon peppermint extract
  • A pinch of salt
  • Candy canes for stirring (Optional)
Instructions:
  1. In a saucepan over medium heat, whisk the moringa, water and coconut milk together.
  2. Reduce the heat to low, then add the chocolate chips and stir continuously until all the ingredients are fully incorporated.
  3. Carefully whisk in the salt and peppermint extract.
  4. Pour the mixture into mugs. Stir with a candy cane for extra flavor before drinking.
